Pear Pressure

The good kind of peer pressure. Our Ethiopian natural rotates lot to lot as we experiment, but it always stays true to Yirgacheffe. This one comes from smallholder farmers delivering to the Gotiti wet mill in the Kochere district, grown at high altitude on fertile volcanic soil that's made this part of Ethiopia famous for exceptional microlots. Grown from heirloom varieties and carefully hand-sorted, water-floated, and dried on raised beds over two to three weeks, it's a lively, fruit-forward cup: bold pear-drop sweetness upfront, a clean lime brightness running through, and soft, perfumed jasmine drifting in at the finish.

Most coffees are labelled as espresso or filter. We see things differently. Every coffee has its own personality, so we roast each one to bring out its unique flavour, sweetness and character, rather than making it fit a brewing method.
