Red Velvet

Red velvet cake, poured into a cup. This lot comes from La Laguna, twelve smallholder families farming together as the Manantial Association, part of the CENCOIC Co-Operative in Colombia's Cauca Department. The co-operative has deep roots in rebuilding the region after years of conflict linked to the international drug trade, working alongside the local community police force to improve safety and prosperity for the farmers there. Grown almost entirely under shade, using home-made natural fertiliser, this lot includes F6, a rare varietal bred over six generations from the best Castillo cherries. Each family washes, ferments, and dries their own harvest before it comes together as one, resulting in delightful bursts of redcurrant, creamy vanilla, and luxury cacao nib.

Most coffees are labelled as espresso or filter. We see things differently. Every coffee has its own personality, so we roast each one to bring out its unique flavour, sweetness and character, rather than making it fit a brewing method.
