Vanilla Cake

Vanilla cake, brewed instead of baked. This is Zawadi, our peaberry lot from Nyeri County, just off Mount Kenya. Peaberries are a natural rarity: around 10% of cherries form a single, rounded bean instead of the usual two, concentrating all the sweetness and acidity that would normally be shared between them. Ours is carefully selected from the Kamandi and Ndia-ini coffee factories. Grown using SL28 and Ruiru 11, varietals developed specifically for Kenya's climate, this coffee lives up to its Swahili name, meaning "gift." One word of advice: brew it as filter or cafetière rather than espresso, unless wild acidity is exactly what you're after.

Most coffees are labelled as espresso or filter. We see things differently. Every coffee has its own personality, so we roast each one to bring out its unique flavour, sweetness and character, rather than making it fit a brewing method.
